Fresh Rainbow Salsa

"But the fruit of the Spirit is love, joy, peace, patience, kindness,
 goodness, faithfulness, gentleness and self-control." 
 Galatians 5:22-23


Food for the Palate
Ingredients:
1/4 cup cherry tomatoes, diced
1/2 cup fresh pineapple, diced
1 nectarine, diced
1/4 red onion, diced
2 garlic cloves, minced
1/4 tsp salt
1/8 tsp red pepper flakes
Zest of a lemon
Juice of a lemon
1/2 cup fresh parsley, chopped

Instructions:
Prepare all of your ingredients and put into a bowl and toss. I served this on top of steamed salmon, and it was fresh and delicious! Tasty to the Palate!


Food for the Soul
We love salmon in our house. We try to eat it at least twice a week. Not only is it delicious, but it is excellent for your heart, and it has so many other health benefits. As much as we love salmon, I sometimes get tired of the same old ways I tend to cook it; Lemon, Garlic, and Olive Oil are three of my favorite kitchen staples, but I really wanted to find a way to liven up the salmon today! So, I went to the fridge and discovered that I had a kaleidoscope of items that I needed to use before they went bad, and I began to create a palette of colorful and tasty ingredients. The end result was a delightfully   yummy salsa!

The only color of the rainbow that I didn't have was fresh blueberries. Dinner was already on the stove cooking and my salsa was almost complete, and let's face it, I was hungry. So, with my stomach growling and food heating up, I didn't think it warranted me running to the store to buy them. But I am still calling it "Rainbow Salsa"!

C.S. Lewis, one of the greatest Theologians of all time (my opinion), said; "We must show our Christian colors if we are to be true to Jesus Christ." So how do we know what our "true colors" are as a Christian? In otherwards, "What are the defining marks of a Christian?" And an even more important question should be; "Am I revealing my true colors as a Christian for the world to see?" 
In order to know what the distinguishing marks of a true Christian are, we must start with the Bible. God's Word is the only authority when it comes to understanding and knowing what a Christian looks like in their daily lives. We must go straight to the source in order to define the true colors of being a Christian. 

As Christians we all have good days and bad days. And on some of the bad days, I have a difficult time showing vibrant, beautiful colors of the attributes of Jesus Christ. But when you take a good look at my life in general, my hope is that you will see Jesus' character shining through most of the time. And if you don't know for sure what Jesus looks like you just need to look to the "Fruit of the Spirit" found in Galatians 5:22-23; "But the fruit of the Spirit is love, joy, peace, patience, kindness, goodness, faithfulness, gentleness and self-control." Obviously there are many more attributes in Jesus' perfect character, but the above nine "Christian Colors" is a good place to start!

I came across a great poem that you can find in a book titled; "Faith Colors, Encounters with God in Living Faith" by author Lula Adams that I want to share with you; "Red is for boldness and passion, faith that is ready for action. The truth is so real in my heart, sharing Jesus, so eager to start. Orange, the color of fall, the harvest is fruit of the call. Faith for Spirit release, yields love, joy, and peace. Yellow like the sun ever bright, worship in Spirit in fresh light. Yellow is the faith to believe, God's presence to receive. Comforting soothing presence of peace, joy moving softly, never to cease. Faith green from above, fills us with love. Reaching from pale and deep blue, revelation faith, penetrates through. Hope begins with a promise so true, Jesus steadfastly stays true blue. Fine purple for children of the King. Oh, the fullness of faith that it brings. Let all Christians claim and sing, our Father, the Creator and King. Overwhelming white light, cleaning everything in sight. Simple faith to believe God's grace to receive."  Lula Adams

We all need to surrender our own character to God's Spirit and allow Him to start reflecting the gorgeous, radiant Kaleidescope that only He can give to a world that is often a little too gray, and becoming darker every day.  Satisfying to the Soul!
