Today's Recipe: "Shepherd's Pie"

 


         


                           
  

Ingredients:

1 large onion, chopped
2 celery ribs, chopped
3 Tbsp butter, divided
1 cup frozen peas
1 chopped carrot
3 Tbsp all-purpose flour
1 tsp onion powder
1 tsp garlic powder
1 1/2 cups chicken broth (can sub vegetable broth)
1/2 cup heavy cream
1 pound ground beef
2 cloves fresh garlic, minced
2 Tbsp dried parsley flakes
1/2 tsp salt
1/2 tsp pepper
2 cups mashed potatoes, already prepared
2 cups shredded cheddar cheese



In a large skillet, add ground beef, onion, celery and carrots in 1 tablespoon butter until tender. Add frozen peas and remaining butter; cook 2 minutes longer.

Stir in flour, onion powder and garlic powder until blended; gradually add broth and cream. Bring to a boil; cook and stir for 1 minute or until thickened. Add parsley, salt and pepper.

Transfer to a greased 2-qt. baking dish. Top with potatoes and cover with cheese. Bake uncovered, at 350° for 25-30 minutes or until heated through and cheese is golden brown. ENJOY!



My Shepherd

I love John 10:14 when Jesus says; “I am the Good Shepherd; I know My sheep and My sheep know Me.” The fact that Jesus knows me is the most comforting truth about my relationship with Him. This Truth is the very foundation of my faith journey. Jesus knows me better than I know myself, therefore I can trust that He is going to do whatever it takes for me to cooperate with Him in my process of becoming more like Him!

Let’s be honest, we are living in crazy times! Destructive viruses, economic collapse, politics filled with the foulest of hatred, uncontrolled violence, looting, homelessness and racism that just seems to get worse every day. I don’t believe that God wants any of these things to be happening. And yet I do believe that He will use what is happening for His glory if we surrender to the Good Shepherd, Jesus, and let Him lead us!

Did you know that Sheep can recognize faces? Sheep have been classified as silly and brainless creatures. And while sheep have been labeled as such, one thing that is for sure is that they know their shepherd and their lives depend on knowing him. I too can be brainless and silly, but I also know my "Shepherd" and my life depends on Him. I might find myself in a sticky mess now and again, but the Good Shepherd, Jesus, will always bring me back into His fold.
