EASY GRILLED PEACHES AND SAUSAGE

1 tbsp butter (melted)
Instructions: It really is this easy!
Brush your grill with olive oil. Put your four sausages on your medium-high grill pan, cook until you have the char grill marks and then turn over on the other side and repeat. Cut your peaches in half, remove the pits and skins. Dip your peaches in boiling water and the skin will remove easily. Brush the pit sides with butter and place on grill next to your sausage. Grill until heated through and you have nice grill marks.
This is a delicious dish, and you can serve it with rice, polenta, potatoes or whatever you want. I served it with freshly made focaccia bread, which is also super easy, and the recipe will be coming soon! Tasty to the Palate!
Food for the Soul:
As I was removing the pits (or stones) from my peaches, I was reminded about how these past six months I have allowed myself to trip and fall into a 'pit' of my own. We recently moved to the Big Island of Hawaii, which I just love. But moving to a location where you don't know a single person has its challenges. It seems to have been easier when I was younger. One month after we arrived on the island, I had a serious back injury which has manifested into more than one health challenge for me. We are 2,500 miles away from my children and grandchildren, which has also added to more difficulty to this move. It certainly has become an opportunity for the devil to have a foothold on my attitude and emotions.
I want to make something really clear - I take full responsibility for my "pity party". Regardless of circumstances or challenges we find ourselves in, we can always call upon the Lord and lean on Him for strength, comfort, direction and hope. Don't get me wrong, I was trying to lean on God... well, sort of. I was half-heartedly 'all in' for whatever was going to come my way. Unfortunately, I let my guard down and started feeling sorry for myself. Once I let my circumstances become burdens, it didn't take long before I found that I had tripped and fallen right into the pit the devil himself had planned for me!
Psalm 40:2 tells us: "He lifted me out of the slimy pit, out of the mud and mire; He set my feet on a rock and gave me a firm place to stand." It seems that King David had found himself in a pit of his own when he wrote Psalm 40. There were many reasons as to why David was in a pit of mud and mire, just read his story, but that isn't what is important here. David chose to not stay in that pit by crying out to God. God in His love, mercy and grace, chose to reach down and pull David out. But He didn't just rescue him from a slimy pit, God actually placed David on a firm foundation.
I don't want you to miss a very important truth about David's proclamation in Psalm 40. David didn't just keep his slimy pit of mud and mire to himself. He wasn't embarrassed or discouraged when he had found himself in his dirty predicament. He knew that the only one that could recue him was God.
It's important to read the verse before Psalm 40:2. David waits patiently for God to rescue him; "I waited patiently, and the Lord turned to me and heard my cry." David knew that God would recover him and bring him to safety. We (I) can get discouraged and lose patience in waiting for God sometimes. we don't mean to, but basically when we find ourselves feeling like God doesn't hear us, we can start to blame Him for our circumstances.
