Potato Crusted Quiche



"For no one can lay a foundation other than that which 
is laid, which is Jesus Christ."  1 Corinthians 3:11


Food for the Palate
Ingredients:

2 medium russet potatoes (peeled or unpeeled)
3 Tbsp olive oil
2 tsp salt, divided
2 Tbsp grated pecorino cheese 
1 tsp dried oregano
1 tsp dried thyme
1 tsp crushed, dried rosemary
5 eggs
1 cup of milk (I use 1% to keep it lighter)     
1 diced red bell pepper
1 thinly sliced leek
1/2 cup sliced cremini mushrooms
1/2 cup shredded cheddar cheese
1 tsp garlic powder
1/2 cup cooked and crumbled bacon (optional)
2 Tbsp finely chopped chives (optional)                                

Instructions: Preheat Oven to 400F
Slice your potatoes thinly and put them into a large bowl. Drizzle the olive oil, 1 tsp salt, 1/4 tsp pepper, and the pecorino cheese on top of your potatoes and toss together until well combined. Now arrange your potatoes in a greased pie dish. Make sure you cover the bottom and the sides of the dish by over-lapping the potatoes. You don't want cracks, so you will need to fill in the gaps with leftover potatoes. 

Bake in the oven for 15 minutes. Bring potato crust out of oven and set aside. Reduce your oven to 350F at this time.

In a medium bowl, whisk together the eggs, milk, bacon, cheddar cheese, dried herbs, garlic powder and remaining salt and pepper. Set your bowl aside.

In a sauté pan, cook red bell pepper, leeks and mushrooms until tender. Add them to your bowl of egg mixture. Slowly pour your egg mixture into your Potatoe crust. Bake your quiche for 30-40 minutes, or until the eggs are set and the top is golden brown. I topped mine with some extra bacon and chives. Tasty to the Palate!


Food for the Soul
On the morning of October 15, 2006, two strong earthquakes occurred on the underwater segment of the major rift zone of the Hualalai volcano on the Northwest side of the Island of Hawaii. My husband and I were living on Oahu at the time. I will never forget that Sunday morning. We were getting ready to leave for church and I was coming down the stairs in our home when there was a sudden loud boom sound. And then our whole house started to sway back and forth. We had just experienced a 6.7 earthquake and the one that followed minutes after was a 6.1. Over 80 aftershocks followed shortly after. I was praising God that we had a firm foundation under our two-story home. 

In life we also have "earthquakes" that come suddenly and unexpectedly into our lives that rattle and shake us up, such as the death of a loved one; a health crisis; the loss of a job; a divorce; injustice; a major move; and the list goes one. It is during these times that we realize just how important a true, strong and trusted foundation is in our lives.

The Bible makes sure that we understand how important our foundation is in 1 Corinthians 3:11"For on one can lay a foundation other than that which is laid, which is Jesus Christ." There is nothing stronger, structurally sound, and more trustworthy than Jesus Christ, Himself.

If there is one thing that we can count on in life it is that we will be shaken by the "earthquakes" of various kinds as long as we live in this broken and sinful world. So, it is critically important that we have the proper foundation so that we are able to withstand them when they shake and rattle our lives.

Make sure that your life is being built on the solid foundation of Truth that comes from Christ. If your foundation isn't on Him, then it isn't a foundation at all. It is just a facade, and eventually, it will crack, crumble and fall.  Satisfying to the Soul!
